Mixed Bean Salad

Ingredients
Salad:
  •  Can of mixed beans
  • 2 – 3 ripe tomatoes chopped
  •  ½ cucumber peeled (if non organic) and chopped
  • 1 red or yellow pepper chopped
  • 1 small red onion chopped
  •  10 olives
  •  Large handful fresh coriander and parsley
Dressing:
  • 3 tbs extra virgin olive oil
  • 1 tbs lemon juice
  • tsp ½lemon zest
  • 1 clove garlic crushed / grated
  •  Sea salt & pepper to taste
Instructions
  1. Mix all salad ingredients in a bowl
     
  2. Mix dressing ingredients and pour over salad, stir gently
     
  3. Great as starter or side dish
     
  4. For lunch add 1 tin tuna in olive oil (drain oil, reserve and use to make dressing)
     
  5. Add green beans, fennel, courgettes, broccoli or other vegetables
