Spicy Stir Fried Brussel Sprouts

Often ignored other than for Christmas dinner, brussel sprouts are in season from September to December. They are a good source of fibre and vitamins, especially vitamin C and folic acid.

Ingredients
  • 500 g Brussel sprouts trimmed and halved
  • 1 tbsp olive oil
  • 1 chilli chopped
  • 2 garlic cloves
  • 3-4 shallots
Instructions
  1. Cook the sprouts in boiling water for 3 minutes, then drain
     
  2. Heat the oil in a frying pan and add chilli, garlic and shallots for 1 minute
     
  3. Add the sprouts and cook for a further 2 minutes
