Often ignored other than for Christmas dinner, brussel sprouts are in season from September to December. They are a good source of fibre and vitamins, especially vitamin C and folic acid.
Ingredients
- 500 g Brussel sprouts trimmed and halved
- 1 tbsp olive oil
- 1 chilli chopped
- 2 garlic cloves
- 3-4 shallots

Cook the sprouts in boiling water for 3 minutes, then drain

Heat the oil in a frying pan and add chilli, garlic and shallots for 1 minute

Add the sprouts and cook for a further 2 minutes
