Red Spiced Cabbage

This dish gives an amazing festive fragrance as well as being both nutritious and delicious. It would be perfect for cooking in a slow cooker.

  • 1 kg sliced red cabbage
  • 225 g chopped onions
  • 225 g peeled & chopped apples
  • 4 tbs red wine vinegar
  •  Zest and juice of one orange
  • 25 g butter
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cloves
  •  Pinch grated nutmeg
  • Salt & freshly ground pepper
  1. Preheat the oven to Gas Mark 4; 180°C; 350°F
  2. Arrange a layer of cabbage in a large casserole dish and alternative with layers of apples and onions. Finish with a layer of the cabbage and season with salt & freshly ground black pepper.
  3. Mix the red wine vinegar and zest plus orange juice & pour over casserole.
  4. Dot the butter on top.
  5. Cover the red cabbage mixture tightly and bake on the bottom shelf of the oven for two hours
  6. Stir mixture every 30 minutes until the cabbage is tender.

Option to cook on the hob for 1.5-2hours, mixing all ingredients , simmering gently and stirring regularly until cabbage is tender.
