Nut Free Energy Balls

With nut allergies increasing and schools becoming a strict nut free zone, it’s hard to know what little extra to put in the children’s lunchboxes.  These are highly nutritious and something a little different.  Enjoy!

Ingredients

For the coating:

  • 30g sunflower seeds
  • 25g (1/4) cup oats
  •  For the filling:
  • 1 cup pitted dates – chopped up small
  • 1 cup oat flakes
  • 60g (1/3) cup raisins
  • 125ml apple juice – not from concentrate
  • 60g sunflower seeds
  • 2 tbsp cocoa powder
  • 1 orange – zest of
Instructions
  1. Blend all ingredients for coating together in a food processor and put aside.
     
  2. Blend all filling ingredients together, roll into little balls and cover with the coating above.
     
Recipe Notes

Alternative:

If you have an intolerance to sunflower seeds, try substituting them with pumpkin seeds.
