This recipe is great fun to make with the kids and is healthy and nutritious. Experiment a little with the nuts & seeds and see what variations you can come up with. Provided your children aren’t in a nut free school, these are perfect for lunchboxes or as an afternoon treat. They are packed with essential omega 3 & 6 fatty acids, magnesium, calcium, zinc, iron, vitamin E & B and are great source of protein. A far healthier treat than the commercial breakfast bars available and cheaper too! These bars are great for boosting our energy naturally while balancing our blood sugars.
Ingredients
- 150g ground almonds
- 150g ground or walnut pieces
- 25g sunflower seeds
- 25g pumpkin seeds
- 50g raisins or dates – chopped
- 1 oz orange juice
- 1 large banana
- 1 tsp cinnamon, nutmeg or cardamom
Instructions

Preheat the oven to 135°C

Mix all ingredients in a large bowl – the mix should be quite sticky

Using a wet spoon, press the mix into a 7 x 11” oiled and lined baking tray

Bake for 45 minutes

Cool in the tray and cut into pieces

Store in the fridge – perfect for freezing
