This simple Chicken & Ginger Stir Fry is not only easy and delicious, it contains immune system boosting ingredients.
- 4 chicken breasts
- 4 Cloves garlic (crushed)
- 2″ ginger (grated)
- 1 red chilli (finely chopped)
- 1 red pepper
- 1 carrot (thinly sliced)
- 2 handfuls mange tout
- 2 red onions
- 2 tsp Sesame oil
- 6 tsp Rice wine
- 6 tsp light soy sauce
Dice the chicken and place in a hot wok with oil and cook for 3-4 minutes or until starting to brown.
Add ginger, garlic and chilli and fry for 2 minutes.
Add onions and vegetables and cook for a further 2 minutes.
Add wine, soy sauce and cook until vegetables are crisp tender and chicken is fully cooked.
Serve with brown rice noodles or brown rice.
