Ingredients
  • 1 raw beetroot washed and peeled
  • 4-5 carrots washed and peeled (if non organic)
  • 1 orange zested and juiced
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 2 tbsp sunflower, pumpkin or sesame seeds

Instructions
  1. Finely grate the beetroot and carrot and mix in a bowl
  2. Add the zest of ½ orange, 1 tbs fresh orange juice and the oil in another bowl and mix well
  3. Season to taste and top with raw or toasted seeds
