- 1 pinch ground cinnamon – optional
- 400ml light coconut milk
- 600ml low fat milk or milk alternative
- 250g quinoa
- 1 pinch salt
- 1/2 tsp vanilla essence
Put all the ingredients in a saucepan over a high heat, stirring regularly.
Bring to the boil, then turn down to a low to medium heat, stirring regularly.
The porridge is cooked when the quinoa grain opens and becomes soft. Depending on the heat, this should take 15-25 minutes to cook.
Make sure you leave a little bit of moisture in the quinoa so the porridge stays creamy and doesn’t dry out.
