Creamy Coconut Porridge

  • 1 pinch ground cinnamon – optional
  • 400ml light coconut milk
  • 600ml low fat milk or milk alternative
  • 250g quinoa
  • 1 pinch salt
  • 1/2 tsp vanilla essence
  1. Put all the ingredients in a saucepan over a high heat, stirring regularly.
  2. Bring to the boil, then turn down to a low to medium heat, stirring regularly.
  3. The porridge is cooked when the quinoa grain opens and becomes soft. Depending on the heat, this should take 15-25 minutes to cook.
  4. Make sure you leave a little bit of moisture in the quinoa so the porridge stays creamy and doesn’t dry out.
