Thai Turkey Lettuce Wraps

Ingredients
  • 350 g turkey breast - cut into strips
  • 30 ml light soy sauce
  • 2 limes - juice of
  • 1 lime - zest of
  • 1 fresh chilli - deseeded
  • 1 tbsp coconut oil
  • 2 cloves garlic
  • 1 courgette - sliced
  • 2 scallions
  • 1 carrot - chopped
  • 1 tbsp coriander
  • 6 little gem lettuce leaves
  • 10 peanuts

Instructions
  1. Place the oil in frying pan on medium to high heat and add the turkey strips. Cook for 2 minutes stirring constantly.
  2. Add the lime juice, zest, chilli, garlic, courgette, scallions and carrots.
  3. Stir fry for 5 – 10 minutes until the turkey is cooked through and vegetables are tender.
  4. Add the coriander and peanuts and stir fry for a further minute.
  5. Remove from heat and divide the mixture between 6 washed little gem lettuce leaves.
Recipe Notes

A simple dish that can be eaten hot or cold and ideal for those who find bread too filling.
